I think the reason that students plagiarize so much is because they really don't want to to the assignment or the topic is too hard for them to understand so they don't really know how to answer it. Granted there's the occasional student who thinks that the teacher won't notice that what they handed in wasn't written by them, but half the time it's because the student doesn't fully understand the topic and is afraid to ask the teacher.
